Easy and Delicious Chicken Briyani
Ingredients
- 1/2 chicken
Blended
- 7-8 shallots
- 3 onions
- 4 garlic cloves
- 4 inches ginger
- 15 dried chilies, boiled soft or use chili paste
Spices and aromatics
- 2 stalks lemongrass, bruised
- 1 pandan leaf, knotted
- 2 bay leaves
- 2 tablespoons briyani spice mix
- 2 tablespoons chili powder
- 1 tablespoon coriander powder
- 1 tablespoon fish curry powder
- 1 tablespoon chicken curry powder
- 1 tablespoon white pepper powder
- 1 teaspoon turmeric powder
- 5 tablespoons chili sauce
- 4 tomatoes, diced
- 1/2 can evaporated milk
- salt to taste
- sugar to taste
- seasoning powder to taste
- water as needed
Preparation
Heat oil and sauté the blended ingredients on low heat until oil separates, stirring occasionally to avoid burning.
Add the spice ingredients, stir well and sauté until fragrant and oil separates.
Add the chicken, stir well, allow it to shrink, then add the milk and water as desired for consistency. Season with salt and sugar, and simmer until the chicken is cooked.
Tips
Simmer the chicken longer for tender, fall-apart meat.
