Malaysian Ayam Masak Merah

Ingredients

  • 1 whole chicken
  • Turmeric powder
  • Salt
  • Ginger

Sauce

  • 10 dried chilies
  • 1-inch piece of ginger
  • 2 lemongrass stalks
  • 4 large red onions
  • 5 garlic cloves
  • 1 small tin tomato puree
  • Salt
  • Sugar
  • Seasoning powder (optional)

Preparation

  1. Wash the chicken and marinate with salt, turmeric, and ginger.

  2. Fry the marinated chicken until golden and set aside.

  3. Blend the dried chilies, ginger, lemongrass, red onions, and garlic.

  4. Heat oil in a pan, add the blended mixture, and stir until fragrant and slightly dry.

  5. Add tomato puree, salt, sugar, seasoning powder, and a little water if more sauce is desired. Bring to a boil until the oil separates.

  6. Add the fried chicken, stir well, and simmer for 2-3 minutes. Turn off the heat.

Tips

  1. This dish is mildly spicy; for more heat, add bird's eye chilies.
