Spicy Turmeric Beef Curry
Ingredients
- 1 kg beef cubes
- 2 tablespoons oil
- 1 large onion, chopped
- 10 cloves garlic, chopped
- 1 tablespoon ginger, chopped
- 2 pieces lemongrass
- 1 tablespoon turmeric
- 1 tablespoon curry powder
- 1/4 teaspoon black pepper
- 1 tablespoon chili paste
- 2 green chili peppers, chopped
- 1-2 cups coconut cream
- 2 tablespoons sugar
- 1 teaspoon salt
For serving
- White rice
Preparation
Heat oil in a medium-sized pot over medium heat, add garlic and ginger, and stir with a wooden spoon until the garlic aroma rises
Cut the wider part of the lemongrass into small pieces using kitchen scissors or a knife and add to the pot, stir until the lemongrass aroma rises
Add turmeric, curry powder, black pepper, chili paste, and green chilies, then continue stirring until the aroma of the spices and chilies rises
Add the beef and stir for 2 to 3 minutes until its water dries and it absorbs the flavors of the spices and chilies
Add coconut cream, sugar, and salt, stir to combine, cover the pot, and cook for 20 minutes, then check the doneness of the meat and the thickness of the sauce, adding a little water if the sauce is too thick or scant
Serve the spicy turmeric beef curry hot with white rice
