Pan Fried Sea Bass Saute
Ingredients
For frying fish
- 2 Sea Bass fillets (from @icelandfoods)
- 1/2 tsp chilli powder
- 1/2 tsp turmeric powder
- 1/2 tsp salt
- 1 tbsp oil
For onion and tomato sauté
- 1 - 2 tbsp oil
- 2 onions, finely sliced
- 1/2 - 1 tsp salt (adjust to taste)
- 1/2 tsp minced garlic
- 1/2 tsp turmeric powder
- 1/2 tsp chilli powder
- 1 tsp mixed curry powder
- 2 chunky sliced tomatoes
- 4 - 5 green chillies
- coriander to garnish
Preparation
Smother the Sea Bass fillets with the spices and fry in 1 tablespoon of hot oil, skin side down first, for a couple of minutes till you can see the top side of the fish slowly start to turn a solid white colour. Flip over and cook for a couple of minutes on the other side. Reserve to one side.
In the same pan heat 1 to 2 tablespoons more oil, add the sliced onions and salt. Wait till the onions are soft and then add the minced garlic and ground spices. Fry for a few minutes, add a splash of water to loosen. Allow the spices to fry out for a few minutes before adding the sliced tomatoes. Fry the tomatoes for a couple of minutes, they should retain their shape.
Lastly add back the fried fish, add the sliced green chillies and coriander and sauté for a few more minutes. Serve with hot basmati rice and enjoy while the fish is piping hot!
