Peanut Tofu Noodle Bowl
Ingredients
- Tofu (quantity not specified)
- Noodles (type not specified)
- 2 tablespoons smooth peanut butter
- 2 cloves garlic, minced
- Handful of spring onions, chopped
- 1 teaspoon dark soy sauce
- 1 teaspoon rice vinegar
- 1 teaspoon maple syrup
- Black pepper or chilli flakes, to taste
- Sesame seeds, to taste
- Hot water, about 3 tablespoons
Preparation
Combine all sauce ingredients in a bowl, add hot water to desired consistency (about 3 tablespoons), stir until smooth, and adjust taste as needed.
Cook the noodles according to package instructions, drain them, and mix in half of the sauce. Cook the tofu until done, then coat it with the remaining sauce.
Serve with greens of choice, such as crispy cucumber.
