5-Ingredient Vegan Ricotta Spread
Ingredients
- 150g blanched almonds or cashews
- 2 tablespoons nutritional yeast flakes
- 1 tablespoon lemon juice
- 1 clove garlic or 1/2 teaspoon garlic powder
- 40-60ml water
- Salt and pepper to taste
Preparation
Add all ingredients to a blender or food processor
Start with 40 ml water and add more if the mixture is too thick or doesn't blend well
Adjust seasoning by adding more nutritional yeast flakes, lemon juice, garlic powder, or salt and pepper to taste
Tips
This spread is great on bread with cucumber and pine nuts, or use it in lasagna and other pasta dishes
