Simple Vegan Avocado Tahini Spread

Ingredients

  • 2 large ripe avocados
  • 3 tablespoons tahini (made from 100% hulled sesame seeds, with a light beige color, and pourable consistency)
  • 3 tablespoons lemon juice or more to taste
  • 1/2 clove garlic
  • 1/2 teaspoon salt or more to taste
  • 1/8 teaspoon black pepper

Preparation

  1. Cut 2 large avocados in half, remove the pit, and scoop the pulp into a food processor

  2. Add 3 tablespoons tahini, 3 tablespoons lemon juice, 1/2 clove garlic, 1/2 teaspoon salt, and 1/8 teaspoon black pepper

  3. Blend until you reach your desired texture. You might have to stop once or twice to scrape down the sides of the food processor

  4. We think the avocado spread should be almost entirely smooth

  5. Taste, adjust for salt and lemon juice, then transfer to a bowl and serve as a dip or a spread

  6. Optionally, you can garnish with a few drops of olive oil and a pinch of sesame seeds

Serving suggestions

  1. Spread it on toasted sourdough bread and top with chickpeas marinated in olive oil, lemon juice, salt, and parsley. Add mixed seeds, thinly sliced red onion and enjoy
