Quick and Easy Sweet Potato Hummus
Ingredients
- 2 cups cubed roasted sweet potato
- 1 15 oz can northern beans rinsed and drained
- 1/2 cup olive oil
- 1/4 cup tahini
- 2 tbsp lemon juice
- 2 cloves garlic
- 1/2 tsp salt
Preparation
Roast sweet potato at 425 F for 30 minutes on a baking sheet lined with parchment.
Add all ingredients to a food processor and blend until smooth.
Serve and enjoy.
Tips
Store in the refrigerator for up to 5 days.
