Quick and Easy Sweet Potato Hummus

Ingredients

  • 2 cups cubed roasted sweet potato
  • 1 15 oz can northern beans rinsed and drained
  • 1/2 cup olive oil
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 2 cloves garlic
  • 1/2 tsp salt

Preparation

  1. Roast sweet potato at 425 F for 30 minutes on a baking sheet lined with parchment.

  2. Add all ingredients to a food processor and blend until smooth.

  3. Serve and enjoy.

Tips

  1. Store in the refrigerator for up to 5 days.
