Homemade Spicy Mint Hummus
Ingredients
- 2 cups boiled garbanzo beans (skin removed)
- 1 tablespoon lemon juice
- 1/4 cup fresh mint
- 2 cloves garlic
- 1/4 cup tahini
- 1/3 cup olive oil plus 2 tablespoons
- Salt
- 1/4 teaspoon crushed red pepper
- Water
Tips
- Use dried garbanzo beans that are soaked and cooked, or canned ones that are rinsed and drained, for best results
- Removing the skin from garbanzo beans improves the smoothness and creaminess of the hummus
Preparation
Process all the ingredients in a food processor until smooth and creamy
Add some cold water to get the right consistency
Drizzle 2 tablespoons olive oil before serving
Serve with crushed red pepper
