Homemade Spicy Mint Hummus

Ingredients

  • 2 cups boiled garbanzo beans (skin removed)
  • 1 tablespoon lemon juice
  • 1/4 cup fresh mint
  • 2 cloves garlic
  • 1/4 cup tahini
  • 1/3 cup olive oil plus 2 tablespoons
  • Salt
  • 1/4 teaspoon crushed red pepper
  • Water

Tips

  • Use dried garbanzo beans that are soaked and cooked, or canned ones that are rinsed and drained, for best results
  • Removing the skin from garbanzo beans improves the smoothness and creaminess of the hummus

Preparation

  1. Process all the ingredients in a food processor until smooth and creamy

  2. Add some cold water to get the right consistency

  3. Drizzle 2 tablespoons olive oil before serving

  4. Serve with crushed red pepper
