Cajun Crispy Breaded Chickpeas

Ingredients

  • chickpeas (quantity not specified)
  • 1/2 cup almond flour
  • 1 tablespoon olive oil or any oil
  • 2 tablespoons Cajun seasoning

Preparation

  1. Preheat oven to 375 degrees.

  2. Spread the chickpeas out on a baking sheet and roast them dry for 30 minutes, shaking them occasionally.

  3. Mix together the almond flour and Cajun seasoning in a small bowl.

  4. Remove from oven and place in a bowl.

  5. Toss with olive oil.

  6. Add the almond flour mixture and coat the beans.

  7. Spread the beans out on a piece of parchment paper on a cookie sheet and bake for another 10-15 minutes until crisp on the outside.
