Cauliflower Gnocchi Breakfast with Eggs and Avocado
Ingredients
- 1/2 bag cauliflower gnocchi (from Trader Joe's)
- 2 eggs
- olive oil
- everything but the bagel seasoning (from Trader Joe's)
- 1/2 avocado
- 1/2 banana
- cinnamon
Preparation
Microwave the cauliflower gnocchi in a bowl for a few minutes to thaw it out.
Add the gnocchi to a skillet over low-medium heat with olive oil and cook for 7-8 minutes until crispy, stirring occasionally to ensure even cooking.
Fry 2 eggs in a pan.
Mash 1/2 avocado.
Slice 1/2 banana and sprinkle with cinnamon.
Assemble the breakfast plate by placing the cooked gnocchi, fried eggs, mashed avocado, and prepared banana together.
Top the eggs or the plate with everything but the bagel seasoning for added flavor.
Note: The gnocchi tastes amazing plain without any sauce, and it's great served with eggs for a savory-sweet combination.
