Delicious Vegan Spelt Vegetable Pizza
Ingredients
- 600 grams of spelt flour
- 2 1/2 teaspoons of salt
- 2 tablespoons of dry yeast
- 1/2 cup of warm water
- 1 cup of water (You might need more if the dough appears too dry.)
- 3 tablespoons of olive oil
- 2 cloves of crushed garlic
- 1 can of peeled tomatoes
- 2 cups of sweet potatoes grated
- 2 cups of zucchini grated
- 1 cup mushrooms
- 1/2 cup sliced red onions
- Few leaves of basil for decoration after the pizza has cooked
- You can use any vegetables you like and vegan cheese if you prefer
- Olive oil spray (helps the dough not to stick in the mixing bowl)
Preparation
Dough
Place 1/2 cup of warm water in a bowl and add 2 tablespoons of dry yeast and stir until yeast is dissolved. Let it stand for 5 minutes.
Spray your mixing bowl with olive oil spray. In the mixer add flour, 1/2 teaspoon of salt, 1 tablespoon of olive oil and prepared yeast mixture. Combine mixture until a ball of dough is formed. Mix for 15 minutes. Let it prove for a few hours.
Tomato sauce
In a fry pan add 1 tablespoon of olive oil, 1 teaspoon of salt, pepper, garlic, and sauté for a few minutes then add your peeled tomatoes. Cook for 15 minutes on low heat. Set aside.
Vegetable cooking
In a fry pan add 1 tablespoon of oil, 1 teaspoon of salt, sliced onions, zucchini and sweet potatoes. Set aside.
Assembly
Remove your dough from your bowl and place it on a floured bench and cut in three pieces. Roll your dough out. On an oiled medium rectangular or round tray add your pizza base then add the tomato sauce and start placing the vegetables on top. Cook for 20 to 25 minutes. After cooking, decorate with a few basil leaves.
