Fried Eggplant Toast Rolls
Ingredients
- 12 slices of toast
- 1 large eggplant, sliced thin and fried
- 1/2 cup mayonnaise
- 1/4 cup chopped pickles
- 1/2 cup chopped lettuce
- 1/2 teaspoon sumac
Garnish
- Grated carrot / parsley
Preparation
Using a serrated knife, cut the edges of the toast and flatten the slices with a rolling pin to make them thin.
Spread the slices with mayonnaise, place an eggplant slice, sprinkle with sumac, and add a little pickle and lettuce.
Roll the slices into cylinders, spread the edges with a little mayonnaise, and dip the edges in grated carrot and parsley.
Place them on a serving dish and serve immediately.
