Fried Eggplant Toast Rolls

Ingredients

  • 12 slices of toast
  • 1 large eggplant, sliced thin and fried
  • 1/2 cup mayonnaise
  • 1/4 cup chopped pickles
  • 1/2 cup chopped lettuce
  • 1/2 teaspoon sumac

Garnish

  • Grated carrot / parsley

Preparation

  1. Using a serrated knife, cut the edges of the toast and flatten the slices with a rolling pin to make them thin.

  2. Spread the slices with mayonnaise, place an eggplant slice, sprinkle with sumac, and add a little pickle and lettuce.

  3. Roll the slices into cylinders, spread the edges with a little mayonnaise, and dip the edges in grated carrot and parsley.

  4. Place them on a serving dish and serve immediately.
