Indonesian Grilled Chicken Satay

Ingredients

  • 400 grams chicken thigh fillet
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon salt

Sambal

  • 5 shallots
  • 2 garlic cloves
  • 2 red curly chilies
  • 6 red bird's eye chilies
  • Salt to taste
  • Sugar to taste
  • Water as needed
  • Chicken stock powder to taste

Preparation

  1. Mix all chicken ingredients and let marinate in the refrigerator overnight.

  2. Blend all sambal ingredients and cook briefly; set aside.

  3. Remove chicken from refrigerator, skewer the meat, and grill until evenly cooked, flipping frequently to keep it white.

  4. Serve the sate taichan with the sambal and a squeeze of lime juice.
