Sweet and Savory Chicken Satay
Ingredients
- 500 grams chicken thigh with skin
- Satay skewers
- Fried shallots for sprinkling
- Lime
Marinade
- 5 shallots
- 2 cloves garlic
- 1 teaspoon toasted coriander
- 2 tablespoons oyster sauce
- 1 tablespoon sweet soy sauce
- 1 tablespoon lemon juice
- 1/4 block palm sugar
Basting sauce
- 1 tablespoon oyster sauce
- 4 tablespoons sweet soy sauce
- 1 tablespoon margarine
Preparation
Blend the marinade ingredients until smooth and mix them together.
Clean the chicken and cut it into thin strips.
Marinate the chicken in the marinade mixture overnight.
Soak the satay skewers in water for a few minutes.
Skewer the marinated chicken onto the skewers.
Mix the basting sauce ingredients together until well combined.
Grill the satay on a grill or non-stick pan, basting with the basting sauce and turning occasionally, until fully cooked.
Remove from heat and serve with sweet soy sauce chili and a sprinkle of fried shallots.
