Ingredients
- spring mix
- 1 lb Brussels sprouts
- 2 sweet potatoes
- balsamic vinegar
- avocado oil
- garlic
- beets
- feta cheese
- almonds
- pomegranate balsamic dressing
Preparation
Preheat oven to 400°F
Coat sweet potatoes with balsamic vinegar, avocado oil, and garlic
Roast Brussels sprouts, sweet potatoes, and beets in the oven until tender
Assemble the salad by combining spring mix, roasted vegetables, feta cheese, almonds, and drizzle with pomegranate balsamic dressing
