Winter Veggie Loaded Salad

Ingredients

  • spring mix
  • 1 lb Brussels sprouts
  • 2 sweet potatoes
  • beets
  • feta cheese
  • almonds
  • pomegranate balsamic dressing

Preparation

  1. Preheat oven to 400°F (204°C)

  2. Coat Brussels sprouts and sweet potatoes with balsamic vinegar, avocado oil, and minced garlic

  3. Roast the coated vegetables and beets in the oven until tender, about 30-40 minutes

  4. Assemble the salad by combining spring mix, roasted vegetables, feta cheese, almonds, and pomegranate balsamic dressing in a large bowl
