Winter Veggie Loaded Salad
Ingredients
- spring mix
- 1 lb Brussels sprouts
- 2 sweet potatoes
- beets
- feta cheese
- almonds
- pomegranate balsamic dressing
Preparation
Preheat oven to 400°F (204°C)
Coat Brussels sprouts and sweet potatoes with balsamic vinegar, avocado oil, and minced garlic
Roast the coated vegetables and beets in the oven until tender, about 30-40 minutes
Assemble the salad by combining spring mix, roasted vegetables, feta cheese, almonds, and pomegranate balsamic dressing in a large bowl
