Mediterranean Orzo Salad
Ingredients
- 1 box of gf orzo
- 1 cup cherry tomatoes quartered
- 3/4 cup chopped artichoke hearts
- 1/2 red pepper diced
- 1/4 red onion finely diced
- 1/2 cup feta
- 1/2 cup lightly packed dill
- 1/3 cup kalamata olives
- 1/2 cup toasted slivered almonds
- 2-3 tbsp olive oil
- sea salt and cracked pepper to taste
Preparation
Cook orzo according to package, drain and stop with cold water
Throw everything into a large mixing bowl and gently mix to combine
Finish with olive oil, sea salt and pepper and extra dill
