Mediterranean Quinoa Salad with Feta and Fresh Vegetables
Ingredients
- 1 cup quinoa (uncooked)
- Greens of your choice (kale/lettuce/spinach)
- 1 container cherry tomatoes
- 1 large cucumber
- 1 cup kalamata olives
- 1/3 cup red onion
- 1/3 cup parsley
- 1 cup feta
- 1/4 cup olive oil
- 1.5 tbsp red wine vinegar
- 1 tsp oregano
- Salt, pepper, and chili flakes (optional)
- Option to add eggs, chicken, tuna, etc.
Preparation
Cook quinoa according to package instructions.
Chop tomatoes, cucumber, olives, red onion, and parsley.
Whisk together olive oil, red wine vinegar, oregano, salt, pepper, and optional chili flakes to make the dressing.
In a large bowl, combine cooked quinoa, chopped vegetables, and dressing. Toss to coat everything evenly.
Serve the quinoa and vegetable mixture over a bed of additional greens (kale, lettuce, or spinach).
Top with crumbled feta cheese.
