Crispy Parmesan Kale Salad with Whisps
Ingredients
- 4 cups chopped kale
- 1/4 cup thinly sliced red onion
- 1/2 cup Parmesan Whisps (from @whispssnacks)
- 1/4 cup sunflower seeds
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 garlic clove
- 1 tsp Dijon mustard
- 1 tsp maple syrup
- Chili flakes
Preparation
Whisk together olive oil, lemon juice, garlic, Dijon mustard, and maple syrup.
Add chopped kale to a large bowl and drizzle the dressing over it.
Add thinly sliced red onion to the bowl and toss everything with tongs for about 5 minutes, until the kale has softened.
Top the salad with sunflower seeds, chili flakes, salt, and pepper.
Sprinkle the Parmesan Whisps over the salad and gently toss again.
