Crispy Parmesan Kale Salad with Whisps

Ingredients

  • 4 cups chopped kale
  • 1/4 cup thinly sliced red onion
  • 1/2 cup Parmesan Whisps (from @whispssnacks)
  • 1/4 cup sunflower seeds
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 garlic clove
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup
  • Chili flakes

Preparation

  1. Whisk together olive oil, lemon juice, garlic, Dijon mustard, and maple syrup.

  2. Add chopped kale to a large bowl and drizzle the dressing over it.

  3. Add thinly sliced red onion to the bowl and toss everything with tongs for about 5 minutes, until the kale has softened.

  4. Top the salad with sunflower seeds, chili flakes, salt, and pepper.

  5. Sprinkle the Parmesan Whisps over the salad and gently toss again.
