Easy Veggie Loaded Bowl

Ingredients

  • Spinach
  • 1/2 avocado
  • 1 lb Brussels sprouts
  • Sweet potato
  • Almonds
  • Sesame seeds
  • Everything seasoning
  • Organic girl dressing
  • Olive oil

Preparation

  1. Preheat oven to 400°F

  2. Coat 1 lb Brussels sprouts with 1 tablespoon olive oil and bake at 400°F for 40 minutes

  3. Cut sweet potato, coat with a little olive oil, and bake at 400°F for 30 minutes

  4. Assemble the bowl by starting with spinach, adding 1/2 avocado, roasted Brussels sprouts, baked sweet potato, almonds, sesame seeds, everything seasoning, and dressing on top
