Easy Veggie Loaded Bowl
Ingredients
- Spinach
- 1/2 avocado
- 1 lb Brussels sprouts
- Sweet potato
- Almonds
- Sesame seeds
- Everything seasoning
- Organic girl dressing
- Olive oil
Preparation
Preheat oven to 400°F
Coat 1 lb Brussels sprouts with 1 tablespoon olive oil and bake at 400°F for 40 minutes
Cut sweet potato, coat with a little olive oil, and bake at 400°F for 30 minutes
Assemble the bowl by starting with spinach, adding 1/2 avocado, roasted Brussels sprouts, baked sweet potato, almonds, sesame seeds, everything seasoning, and dressing on top
