Honey Balsamic Salmon Salad

Ingredients

  • 3 salmon fillets
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 2 tablespoons balsamic vinegar
  • Avocado oil
  • Shaved Brussels sprouts
  • Sweet potatoes

Preparation

  1. Mix honey, garlic powder, and balsamic vinegar in a small bowl.

  2. Coat a pan with avocado oil and heat over medium heat.

  3. Add salmon fillets and cook for 3 minutes on each side.

  4. Add the honey balsamic mixture and cook for an additional 2 minutes.

  5. In another pan, sauté shaved Brussels sprouts in avocado oil over medium heat until tender.

  6. Preheat oven to 425°F Cube sweet potatoes, toss with oil and spices like salt, pepper, and chili powder, and roast for 20-25 minutes until crispy
