S a L M O N Is a Weeknight Favourite
Ingredients
- 2 salmon fillets
- 1 bunch of asparagus
- 2 sweet potatoes or more {i always bake extra to have for lunches}
- olive oil
- salt, pepper, other spices eg. a ready fish rub {my father in law‘s champion rub is the besssst, also stay tuned ?}
Preparation
Preheat oven to 400
Peel and chop potatoes; toss in bowl with olive oil, salt and pepper
Spread on a baking sheet with parchment paper and bake for 50 mins {you can broil at the end for 2 mins for additional crispiness}
Rub fish with oil, season with a rub or make your own and place on baking sheet with tin foil or parchment paper - toss asparagus in oil, salt and pepper and add to salmon baking sheet
When the potatoes have 20 mins remaining, add salmon and asparagus into the oven
Remove and serve with your favourite sauce for dipping {my go to - spicy mayo}
