Vegan Sweet Potato Fries with Maple Glaze
Ingredients
- 1-2 sweet potatoes (8-900g.)
- 1/3 cup of olive oil
- 1 clove of pressed garlic (can be omitted)
- 1/2 tablespoon of chili (can be omitted)
- 1 tablespoon thyme and rosemary
- 1 tablespoon maple syrup
- Salt and pepper
Preparation
Preheat the oven to 220c (425 f).
Wash the sweet potatoes thoroughly.
Cut in thin long slices (incl. the skin).
Mix oil, garlic, chili, thyme, rosemary, maple syrup, salt and pepper well together.
Add on top on of the potatoes and mix well.
Place on a baking tray and bake in the oven for 15-20 minutes, then flip and bake for 15-20 minutes more.
Serve with spinach, avocado slices, hummus, couscous and drizzle with sesame seeds.
