Winter Veggie Loaded Salad

Ingredients

  • Spring mix
  • 1 lb Brussels sprouts
  • Balsamic vinegar
  • Avocado oil
  • Garlic
  • 2 sweet potatoes
  • Beets
  • Feta cheese
  • Almonds
  • Pomegranate balsamic dressing

Preparation

  1. Preheat oven to 400°F

  2. Coat Brussels sprouts with balsamic vinegar and avocado oil

  3. Coat sweet potatoes with balsamic vinegar, avocado oil, and garlic

  4. Roast beets until tender

  5. Roast all coated vegetables on one pan until done

  6. Assemble salad by combining spring mix, roasted vegetables, feta cheese, almonds, and pomegranate balsamic dressing
