Socca Flatbread with Spring Vegetables

Ingredients

Flat bread

  • 1 cup plus 1 teaspoon garbanzo flour
  • 1 cup water
  • 2 cloves minced garlic
  • 1 tablespoon chopped fresh basil or 1 teaspoon dried basil
  • 1 tablespoon fresh oregano or 1 teaspoon dried oregano
  • 1 pinch sea salt
  • Black pepper to taste
  • Olive or avocado oil for greasing the pan

Toppings

  • 1/2 cup hummus
  • 1 handful arugula (can substitute other greens)
  • 1/2 cup sliced radishes (watermelon, purple daikon, French, breakfast, or other radish)
  • 1/2 zucchini, sliced thin
  • 1/4 yellow bell pepper, cut into bite-sized pieces

Preparation

  1. Mix the garbanzo flour, water, minced garlic, herbs, salt, and pepper to form a batter.

  2. Lightly grease a baking pan with oil.

  3. Pour the batter into the prepared pan and bake in a preheated oven until set and golden, about 15-20 minutes at 200°C.

  4. Remove from oven, add the toppings, and serve immediately or bake briefly to warm.
