Socca Flatbread with Spring Vegetables
Ingredients
Flat bread
- 1 cup plus 1 teaspoon garbanzo flour
- 1 cup water
- 2 cloves minced garlic
- 1 tablespoon chopped fresh basil or 1 teaspoon dried basil
- 1 tablespoon fresh oregano or 1 teaspoon dried oregano
- 1 pinch sea salt
- Black pepper to taste
- Olive or avocado oil for greasing the pan
Toppings
- 1/2 cup hummus
- 1 handful arugula (can substitute other greens)
- 1/2 cup sliced radishes (watermelon, purple daikon, French, breakfast, or other radish)
- 1/2 zucchini, sliced thin
- 1/4 yellow bell pepper, cut into bite-sized pieces
Preparation
Mix the garbanzo flour, water, minced garlic, herbs, salt, and pepper to form a batter.
Lightly grease a baking pan with oil.
Pour the batter into the prepared pan and bake in a preheated oven until set and golden, about 15-20 minutes at 200°C.
Remove from oven, add the toppings, and serve immediately or bake briefly to warm.
