Tuna with Mango and Cilantro Vinaigrette
Ingredients
- 2 diced mangos
- 3 cans tuna in water
- 2 diced avocados
- 1/2 red onion finely chopped
- 1/3 cup olive oil
- Juice of 2 lemons
- 3 tablespoons finely chopped fresh cilantro
- Salt and pepper to taste
Preparation
Prepare the cilantro vinaigrette by mixing olive oil, lemon juice, chopped cilantro, salt, and pepper.
In a large bowl, combine the diced mango, diced avocado, chopped red onion, and tuna.
Toss all ingredients together with the vinaigrette.
Serve immediately.
