Tuna with Mango and Cilantro Vinaigrette

Ingredients

  • 2 diced mangos
  • 3 cans tuna in water
  • 2 diced avocados
  • 1/2 red onion finely chopped
  • 1/3 cup olive oil
  • Juice of 2 lemons
  • 3 tablespoons finely chopped fresh cilantro
  • Salt and pepper to taste

Preparation

  1. Prepare the cilantro vinaigrette by mixing olive oil, lemon juice, chopped cilantro, salt, and pepper.

  2. In a large bowl, combine the diced mango, diced avocado, chopped red onion, and tuna.

  3. Toss all ingredients together with the vinaigrette.

  4. Serve immediately.
