Upgraded Guacamole with Truffle Oil and Lentils

Ingredients

  • 2 ripe avocados
  • Large handful of coriander – approx. 50gms
  • 1-2 green chillis
  • 1-2 cloves garlic
  • Salt to taste
  • 1 small tomato
  • Juice of 1 lime (adjust to taste)
  • 1/4 pack @merchantgourmet Puglia lentils in truffle oil
  • 1 tablespoon truffle oil to serve
  • 2 seeded wholemeal wraps
  • 1 tablespoon truffle oil

Preparation

  1. Blend all the ingredients except the lentils and truffle oil together to a smooth or chunky consistency as preferred.

  2. Just before serving, sprinkle on the lentils and drizzle with truffle oil.

Tortilla chips

  1. Slice the tortillas into rough triangle shapes.

  2. Brush one side with truffle oil using a pastry brush.

  3. Lay flat on baking paper.

  4. Bake in the oven at 180°C for about 10-12 minutes and rotate the tray halfway through to cook evenly.

  5. Allow to cool before serving; they should be just turning golden and will harden as they cool.
