Vegan Chickpea Curry with Mixed Veggies

Ingredients

  • chopped onions
  • garlic
  • eggplant
  • zucchini
  • mushrooms
  • chickpeas
  • 1/2 cup unsweetened soy milk
  • 1/4 cup water
  • turmeric
  • pepper
  • garlic powder
  • ginger powder
  • a little nutmeg
  • cayenne pepper
  • chili flakes

Preparation

  1. Water fry chopped onions and garlic.

  2. Add desired veggies such as eggplant, zucchini, and mushrooms.

  3. When veggies are cooked, add chickpeas.

  4. Add 1/2 cup unsweetened soy milk, 1/4 cup water, turmeric, pepper, garlic powder, ginger powder, a little nutmeg, cayenne pepper, and chili flakes.

  5. Cook on low heat until the liquid thickens.

  6. Serve with squash seeds.
