Vegan Chickpea and Vegetable Stirfry Bowl

Ingredients

  • chickpeas
  • cabbage
  • spinach
  • mushroom
  • zucchini
  • onions
  • minced garlic
  • minced ginger
  • 1-2 tbsp soy sauce
  • 2 tsp maple syrup
  • 1 tbsp water
  • avocado (optional)
  • Jade Pearl Rice (optional)

Preparation

  1. Sauté onion and mushrooms until they start to soften and brown.

  2. Add minced garlic, minced ginger, chickpeas, zucchini, and cabbage, and cook until the garlic and ginger become fragrant.

  3. Add in 1-2 tbsp of soy sauce, 2 tsp maple syrup, and 1 tbsp of water. Stir the mixture until fully coated and allow the liquid to cook off.

  4. Serve, optionally paired with avocado and Jade Pearl Rice. Feel free to use any vegetables you like or have on hand.
