Plant-Based Vegan Stir-Fry Bowl with Miso Glaze

Ingredients

  • chickpeas
  • broccoli
  • snow peas
  • onion
  • shiitake mushrooms
  • spinach

Miso glaze

  • 2 tbsp soy sauce
  • 2 tsp maple syrup
  • 1 tsp minced garlic
  • 1/4 tsp ginger powder
  • 1 tsp mustard
  • 1 tsp miso paste
  • 1/2 tsp cornstarch
  • 2 tbsp water

Preparation

  1. Prepare the miso glaze by adding all glaze ingredients to a small bowl and whisking until miso is fully dissolved.

  2. Cook the stir-fry vegetables, including chickpeas, broccoli, snow peas, onion, shiitake mushrooms, and spinach.

  3. At the end of cooking the stir-fry, add the miso glaze and toss until it thickens and coats the vegetables evenly.
