Plant-Based Vegan Stir-Fry Bowl with Miso Glaze
Ingredients
- chickpeas
- broccoli
- snow peas
- onion
- shiitake mushrooms
- spinach
Miso glaze
- 2 tbsp soy sauce
- 2 tsp maple syrup
- 1 tsp minced garlic
- 1/4 tsp ginger powder
- 1 tsp mustard
- 1 tsp miso paste
- 1/2 tsp cornstarch
- 2 tbsp water
Preparation
Prepare the miso glaze by adding all glaze ingredients to a small bowl and whisking until miso is fully dissolved.
Cook the stir-fry vegetables, including chickpeas, broccoli, snow peas, onion, shiitake mushrooms, and spinach.
At the end of cooking the stir-fry, add the miso glaze and toss until it thickens and coats the vegetables evenly.
