Simple Mushroom Rice Stir Fry Dish

Ingredients

  • 1/2 cup mushrooms
  • onions
  • 2 cloves minced garlic
  • 1/2 inch minced ginger
  • 1/2 cup cold rice
  • 1/2 cup beans of choice
  • 2 teaspoons soy sauce or coconut aminos
  • a handful of spinach
  • optional sweetener such as maple syrup or raisins
  • 1-2 teaspoons Sriracha
  • extra cauliflower

Preparation

  1. Sauté 1/2 cup mushrooms and onions until onions are softened.

  2. Add 2 cloves minced garlic and 1/2 inch minced ginger.

  3. Add 1/2 cup cold rice and 1/2 cup beans of your choice.

  4. Add 2 teaspoons soy sauce or coconut aminos and a handful of spinach, then stir until liquid is fully absorbed.

  5. Optionally add a sweetener like maple syrup or some raisins to sweeten.

  6. Feel free to add 1-2 teaspoons Sriracha for heat.

  7. Include extra cauliflower or other vegetables if desired.
