Quick Tofu Fried Rice for Healthy Meals

Ingredients

  • 1 tbsp vegetable oil
  • 250g ready-cooked basmati rice (white or brown)
  • 1 clove garlic
  • thumb-sized piece ginger
  • 1 red chilli
  • 100g smoked tofu
  • 200g pack stir-fry baby vegetables
  • 100g peas
  • 1 tbsp soy sauce or Tamari
  • sriracha to serve (optional)

Preparation

  1. Heat oil in a pan or wok and fry rice for 5-10 minutes.

  2. Add garlic, ginger, and chilli; cook for 2 minutes.

  3. Meanwhile, mash tofu in a separate bowl.

  4. Add tofu and vegetables to the pan; cook for 5 minutes.

  5. Stir in peas and soy sauce; cook until vegetables are tender.

  6. Serve and enjoy, optionally with sriracha.
