Quick Tofu Fried Rice for Healthy Meals
Ingredients
- 1 tbsp vegetable oil
- 250g ready-cooked basmati rice (white or brown)
- 1 clove garlic
- thumb-sized piece ginger
- 1 red chilli
- 100g smoked tofu
- 200g pack stir-fry baby vegetables
- 100g peas
- 1 tbsp soy sauce or Tamari
- sriracha to serve (optional)
Preparation
Heat oil in a pan or wok and fry rice for 5-10 minutes.
Add garlic, ginger, and chilli; cook for 2 minutes.
Meanwhile, mash tofu in a separate bowl.
Add tofu and vegetables to the pan; cook for 5 minutes.
Stir in peas and soy sauce; cook until vegetables are tender.
Serve and enjoy, optionally with sriracha.
