Warming Plant-Based Vegetable Platter

Ingredients

  • kale
  • tomatoes
  • onions
  • radish
  • red cabbage
  • asparagus
  • potatoes
  • vegan yoghurt
  • olive oil
  • vinegar

Preparation

  1. Mix the vegan yoghurt, olive oil, and vinegar to make the sauce.

  2. Gently sauté the asparagus in a pan with a dash of olive oil.

  3. Oven bake the potatoes.

  4. Mix the kale, tomatoes, onions, radish, and red cabbage with the sauce.

  5. Assemble the platter with the mixed vegetables, sautéed asparagus, and baked potatoes.
