Yalda Night Rice Puffs
Ingredients
- 1 glass rice
- 1 spoon salt
- some milk
- water (for soaking and boiling)
- oil (for frying)
Preparation
Wash the rice first.
Mix the rice with one spoon of salt, some milk, and water, and let it soak for a full day until the rice grains expand.
Wash the rice again, then boil it in water until cooked but not mushy, and drain it.
Spread the drained rice on a cloth in a grainy manner to dry; ensure grains are separate or they won't dry properly.
Dry the rice by placing it on a heater or at room temperature for a day until completely dry.
Heat oil in a pan until very hot, then fry the rice puffs in a strainer for a few seconds until they puff up; do not overcook or they will burn.
Drain the puffed rice on a paper towel to absorb excess oil.
The crispy rice puffs are ready; you can fry them again if desired for extra crispiness.
