Yalda Night Rice Puffs

Ingredients

  • 1 glass rice
  • 1 spoon salt
  • some milk
  • water (for soaking and boiling)
  • oil (for frying)

Preparation

  1. Wash the rice first.

  2. Mix the rice with one spoon of salt, some milk, and water, and let it soak for a full day until the rice grains expand.

  3. Wash the rice again, then boil it in water until cooked but not mushy, and drain it.

  4. Spread the drained rice on a cloth in a grainy manner to dry; ensure grains are separate or they won't dry properly.

  5. Dry the rice by placing it on a heater or at room temperature for a day until completely dry.

  6. Heat oil in a pan until very hot, then fry the rice puffs in a strainer for a few seconds until they puff up; do not overcook or they will burn.

  7. Drain the puffed rice on a paper towel to absorb excess oil.

  8. The crispy rice puffs are ready; you can fry them again if desired for extra crispiness.
