Avocado Edamame Toast with Goat Cheese

Ingredients

  • 150g boiled shelled edamame
  • 1 tbsp tahini
  • 2 avocados
  • 1 small onion finely chopped
  • 1 or to taste jalapeño or green chilli
  • 1 tsp lemon juice
  • 1 tbsp finely chopped coriander
  • Salt to taste

Preparation

  1. Make a paste of boiled edamame.

  2. Add the rest of the ingredients to them and mix well.

  3. Spread on a well-toasted sourdough and garnish with goat cheese.

  4. Drizzle some chilli oil if desired.

  5. Serve with miso baked beans.
