Avocado Edamame Toast with Goat Cheese
Ingredients
- 150g boiled shelled edamame
- 1 tbsp tahini
- 2 avocados
- 1 small onion finely chopped
- 1 or to taste jalapeño or green chilli
- 1 tsp lemon juice
- 1 tbsp finely chopped coriander
- Salt to taste
Preparation
Make a paste of boiled edamame.
Add the rest of the ingredients to them and mix well.
Spread on a well-toasted sourdough and garnish with goat cheese.
Drizzle some chilli oil if desired.
Serve with miso baked beans.
