Easy Protein-Packed Chickpea Pasta Salad
Ingredients
- 1 box chickpea pasta
- 1 can organic chickpeas
- Veggies of choice (e.g., broccoli, peppers, tomatoes)
Dressing
- 1/2 cup oil of choice (olive or avocado)
- 1/4 cup vinegar (white or balsamic)
- 1 tbsp garlic powder
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried parsley
- 1/2 - 1 tsp sea salt
- 1/2 tsp pepper
Preparation
Cook and cool the chickpea pasta.
Rinse the chickpeas.
Prepare the veggies as desired (e.g., chop broccoli, peppers, and tomatoes).
Mix all dressing ingredients together in a bowl.
Combine the pasta, chickpeas, veggies, and dressing, then mix well.
Add any additional toppings like olives or pickled artichoke hearts if desired.
