Easy Protein-Packed Chickpea Pasta Salad

Ingredients

  • 1 box chickpea pasta
  • 1 can organic chickpeas
  • Veggies of choice (e.g., broccoli, peppers, tomatoes)

Dressing

  • 1/2 cup oil of choice (olive or avocado)
  • 1/4 cup vinegar (white or balsamic)
  • 1 tbsp garlic powder
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1/2 - 1 tsp sea salt
  • 1/2 tsp pepper

Preparation

  1. Cook and cool the chickpea pasta.

  2. Rinse the chickpeas.

  3. Prepare the veggies as desired (e.g., chop broccoli, peppers, and tomatoes).

  4. Mix all dressing ingredients together in a bowl.

  5. Combine the pasta, chickpeas, veggies, and dressing, then mix well.
