Easy Vegan Zucchini Oat Porridge
Ingredients
- 1/3-1/2 finely grated zucchini (substitute option: carrot)
- 1 cup (50g) oats
- 1 cup (50ml) plant milk
- 1/3ish cup water
- 1 tbsp ground flaxseeds
- a good squeeze of sweetener like maple syrup, date sugar etc.
- vanilla extract
Preparation
Put all in a pot and stir together well.
Turn on the heat and cook it all together till it gets nice and thick, remembering to keep stirring.
When it looks done, turn off the heat and let it sit for a few moments.
Then serve with a ripe banana, dates, blueberries and peanut butter.
