Red Thai Curry Noodles

Ingredients

  • 1 6oz can coconut cream
  • 1 tbsp vegan red Thai curry paste
  • 2 tsp soy sauce
  • 2 tsp maple syrup
  • 1 tsp garlic chili sauce
  • 1/2 cup water

Preparation

  1. Cook noodles according to package instructions

  2. Prepare tofu by pan-frying or baking until golden

  3. Stir-fry or steam vegetables until tender

  4. Combine all broth ingredients in a bowl and whisk together until smooth.

  5. Add broth to a saucepan and bring to a simmer.

  6. Cook until heated through and remove from heat.

  7. Add cooked noodles to broth and serve topped with tofu and veggies.
