Red Thai Curry Noodles
Ingredients
- 1 6oz can coconut cream
- 1 tbsp vegan red Thai curry paste
- 2 tsp soy sauce
- 2 tsp maple syrup
- 1 tsp garlic chili sauce
- 1/2 cup water
Preparation
Cook noodles according to package instructions
Prepare tofu by pan-frying or baking until golden
Stir-fry or steam vegetables until tender
Combine all broth ingredients in a bowl and whisk together until smooth.
Add broth to a saucepan and bring to a simmer.
Cook until heated through and remove from heat.
Add cooked noodles to broth and serve topped with tofu and veggies.
