Turmeric Cauliflower Nourish Bowls

Ingredients

  • 1 small head cauliflower
  • 1 tablespoon olive or avocado oil
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon cumin seed
  • 1/2 teaspoon coriander
  • 1/2 teaspoon salt
  • 2 red bell peppers
  • 1 cup basmati rice
  • 1/4 teaspoon ground cardamom
  • 1 bunch lacinato kale
  • 1 teaspoon extra virgin olive oil
  • 1 lemon
  • 1/2 cup purple cabbage
  • 1 cup shelled edamame
  • 1/3 cup toasted cashews
  • 1/2 cup cilantro
  • 1 lime

Cilantro mint chutney

  • 1/2 cup unsweetened yogurt
  • 3/4 cup cilantro
  • 1/2 cup mint
  • 2 tablespoons fresh ginger
  • 1 garlic clove
  • 3 limes
  • 1 jalapeño
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon agave or maple syrup
  • 1 teaspoon apple cider vinegar

Preparation

  1. Add cauliflower florets to a bowl and drizzle with oil and seasonings. Toss to combine and spread on one half of a parchment lined baking sheet. Place red peppers on other side of sheet and drizzle with a little oil and salt and pepper. Place in oven on convection bake 400 for 20 minutes.

  2. Meanwhile, massage kale until tender and prepare rice by cooking according to package, but adding cardamom while simmering.

  3. Prepare chutney by placing all ingredients in a blender and mixing until super smooth and creamy.

  4. Prepare bowls by tossing rice and massaged kale together and placing at bottom, layering with fresh veggies and edamame, followed by peppers and cauliflower, and topping with cashews, fresh cilantro, chutney, and squeeze of lime.
