Banana Walnut Bread for Comforting Mornings

Ingredients

  • 2 large, mashed bananas
  • 1/4 maple syrup
  • 1/4 cup plant milk (I used soy)
  • 1 1/2 cup spelt or wholemeal flour
  • 1 tsp cinnamon
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • 1 egg (or flax seed egg for #vegan)
  • A generous handful of walnuts

Preparation

  1. Preheat the oven to 180 degree Celsius and line a 1lb bread tin with baking paper or coconut oil.

  2. In a bowl, mix the egg, milk, mashed bananas, honey and vanilla. Add the cinnamon, flour and baking powder until well combined. Stir in the walnuts.

  3. Pour the bread mix into the prepared tin and bake in the oven for 30-40 minutes until knife comes out clean. Allow to cool and ENJOY!
