Sticky Apple and Banana Bread with Chocolate Avocado Frosting
Ingredients
- 2 medium ripe bananas, mashed
- 1 cup of apple purée
- 1 egg
- 1 tsp vanilla essence
- 1 tsp cinnamon
- A generous handful of chopped walnuts
- 2 cups of spelt flour
Frosting
- 1 ripe avocado
- 1/2 cup cocoa powder
- 1/3 cup maple syrup
Preparation
Preheat the oven to 180°C
In a bowl, mix together all the wet ingredients.
Add the cinnamon and flour and stir in the walnuts.
Bake in a greased 1lb loaf tin at 180°C for 35-40 minutes until a knife comes out clean.
Place all frosting ingredients in a food processor and pulse, scraping down the sides until smooth.
Once the bread is completely cool, frost it, slice it, and serve.
