Sticky Apple and Banana Bread with Chocolate Avocado Frosting

Ingredients

  • 2 medium ripe bananas, mashed
  • 1 cup of apple purée
  • 1 egg
  • 1 tsp vanilla essence
  • 1 tsp cinnamon
  • A generous handful of chopped walnuts
  • 2 cups of spelt flour

Frosting

  • 1 ripe avocado
  • 1/2 cup cocoa powder
  • 1/3 cup maple syrup

Preparation

  1. Preheat the oven to 180°C

  2. In a bowl, mix together all the wet ingredients.

  3. Add the cinnamon and flour and stir in the walnuts.

  4. Bake in a greased 1lb loaf tin at 180°C for 35-40 minutes until a knife comes out clean.

  5. Place all frosting ingredients in a food processor and pulse, scraping down the sides until smooth.

  6. Once the bread is completely cool, frost it, slice it, and serve.
