Classic Sweet and Fluffy American Cornbread
Ingredients
- 150 g all-purpose flour
- 150 g cornmeal
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 125 g butter
- 65 g sugar
- 2 tbsp liquid honey
- 1 large egg
- 1 large egg yolk
- 350 ml buttermilk

- Butter and flour, for the pan
For serving
- Butter, for serving
- Liquid honey, for serving
Preparation
Preheat the oven to 180°C conventional (160°C fan). Grease a 25x18 cm baking dish and dust with flour
Mix all-purpose flour, cornmeal, baking powder, baking soda, and salt in a bowl. Melt butter, sugar, and honey in a small saucepan, then add to the flour and cornmeal mixture and stir well
Stir in the egg and egg yolk one at a time, then mix in the buttermilk
Pour the batter into the prepared baking dish and bake for about 30 minutes until golden brown. Cut into pieces and serve
Store in an airtight container at room temperature for at least 2 days
Serving suggestion
Serve warm from the oven with a small piece of butter and some liquid honey
