Gluten-Free Toast with Macadamia Cream Cheese

Ingredients

  • 1 cup raw, unsalted macadamia nuts
  • Juice of 1/2 lemon
  • 1 teaspoon Himalayan salt
  • 1/2 cup finely chopped chives or dill
  • 1 tablespoon extra virgin coconut oil
  • Optional: nutritional yeast

Preparation

  1. Soak the macadamia nuts in water for 2 hours.

  2. Drain and rinse the nuts.

  3. Blend the nuts with lemon juice, salt, coconut oil, and chives until smooth.

  4. If desired, stir in nutritional yeast for extra flavor.

  5. Toast a slice of gluten-free bread.

  6. Spread the macadamia cream cheese on the toasted bread and serve.
