Healthy Banana Bread
Ingredients
- 1/3 cup melted coconut oil
- 1/2 cup maple syrup
- 2 eggs
- 2 large bananas
- plus 1 to decorate with
- 1/4 cup milk
- 1 tsp baking powder
- 1 tsp vanilla essence
- 1/2 tsp sea salt
- 1/2 tsp ground cinnamon
- 1 3/4 cups wholemeal flour
Preparation
Preheat over to 165 degrees
In a large bowl whisk the oil and maple syrup together
Add the eggs and whisk to combine
Add the milk and mashed bananas and whisk
Add the baking powder, vanilla, salt and cinnamon and whisk to combine
Lastly stir in the flour and combine with the wet ingredients
Pour batter into a greased and lined loaf tin
Cut a banana in half lengthways and lay on top of mixture
Bake for 55 minutes
Let bread cool for 10 minutes and transfer to a wire rack to continue to cool
Enjoy with a nice pot of chai tea
