Vegan Creamy Pasta Bowl

Ingredients

  • 2 small potatoes (1 cup, peeled and cubed)
  • 1 small white onion (roughly chopped)
  • 1 tbsp. lemon juice
  • 2 tbsp. nutritional yeast
  • 1 1/3 cup of oat milk
  • 350ml vegan bolognese
  • 500g pasta

Preparation

  1. Bring a small saucepan with water to a boil.

  2. Add the cubed potatoes and the chopped onion.

  3. Cook them for about 5-6 minutes or until the potato cubes are soft.

  4. Drain the water.

  5. Add the veggies to a blender along with lemon juice, nutritional yeast, and oat milk.

  6. Blend until smooth.

  7. Transfer the sauce back to the saucepan.

  8. Bring it to a boil for just a second.

  9. Mix in any tomato sauce you like.

  10. Mix the cream sauce with 350ml of vegan bolognese for 500g of pasta.

  11. Enjoy the dish.
