Easy Vegan Sushi Burger
Ingredients
- 1 cup sushi rice, cooked
- 1/4 cup rice vinegar
- 1 Tbsp. sugar
- 1 tsp. salt
- 1 Tbsp. coconut oil
- 1 clove garlic, crushed
- 1/3 cup tamari or soy sauce
- 1 Tbsp. mirin
- 1 Tbsp. brown sugar
- 1 cup shiitake mushrooms, sliced
- 1/2 avocado
- 1 tsp. wasabi or wasabi powder
- 1 tsp. vegan mayonnaise
- 1 tsp. Sriracha
- Pickled ginger, to taste
- Shredded red cabbage, to taste
- Black sesame seeds, for garnish
Preparation
Prepare sushi rice by mixing the cooked sushi rice with rice vinegar, sugar, and salt in a bowl until well combined.
Heat coconut oil in a pan over medium heat, add crushed garlic, and sauté for 1 minute until fragrant.
Add sliced shiitake mushrooms, tamari or soy sauce, mirin, and brown sugar to the pan. Cook for 5-7 minutes until mushrooms are tender and sauce thickens.
In a small bowl, mix wasabi or wasabi powder with vegan mayonnaise and Sriracha to create a spicy sauce.
Form the seasoned sushi rice into two patties or buns.
Assemble the burger by placing the mushroom mixture on one rice patty, then add sliced avocado, pickled ginger, and shredded red cabbage. Top with the second rice patty and garnish with black sesame seeds.
Serve immediately, optionally with extra wasabi sauce on the side.
