Vegan Homemade Sushi Rolls with Fresh Toppings

Ingredients

  • 500g sushi rice
  • 100ml rice vinegar
  • 2 tsp sugar
  • 1/2 tsp salt
  • 8-10 nori leaves
  • Soy sauce
  • Chilli sauce

Toppings

  • Red cabbage
  • Carrots
  • Oyster mushrooms
  • Smoked tofu
  • Avocado
  • Cucumber
  • Arugula
  • Mango
  • Eggplant
  • Peanuts
  • Kimchi

Sauces

  • 2 tbsp sriracha
  • 4 tbsp vegan mayonnaise
  • 3 tbsp tahini
  • 1 tbsp soy sauce

Extras

  • Pickled ginger
  • Soy sauce
  • Sesame seeds
  • Wasabi

Preparation

  1. Wash the sushi rice

  2. Bring 1.25 times the amount of water to a boil

  3. Cook until no more water is left

  4. Turn heat to the smallest degree

  5. Cook 15 more minutes on lowest heat

  6. Take it from the stove

  7. Add a kitchen towel between the lid and let it swell 15 more minutes

  8. Mix vinegar, sugar and salt together

  9. Pour over the rice

  10. Mix all together

  11. Chop all your toppings

  12. Fry eggplant in chilli sauce

  13. Fry oyster mushrooms in soy sauce

  14. Mix your sauce ingredients together

  15. Now lay the nori leaf on a flat surface on your sushi mat (shiny side looking down)

  16. Place sushi rice, all your toppings and a bowl of water on the table

  17. Add rice on your nori leaf use the water bowl to make your hands wet so that the rice does not stick to your hands

  18. Spread the rice to the nori leaf leaving out 1cm on the top

  19. Fill with your favorite toppings

  20. Roll your sushi together using your sushi mat

  21. Serve with your freshly made sauces
