Vegan Sushi Rolls with Tofu and Vegetables

Ingredients

  • 1 cup sushi rice
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 4 nori seaweed sheets
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1 avocado, thinly sliced
  • 4-6 strips of tofu, fried or grilled
  • Soy sauce, for dipping

Preparation

  1. Cook the sushi rice according to package instructions

  2. In a small bowl, mix rice vinegar, sugar, and salt until dissolved

  3. Fold the vinegar mixture into the cooked rice and let it cool

  4. Prepare the fillings by julienning the carrot and cucumber, and slicing the avocado

  5. Lay a nori sheet on a bamboo mat, spread a thin layer of rice over it, leaving a border

  6. Add the prepared fillings in a line across the center of the rice

  7. Roll the nori tightly using the bamboo mat, sealing the edge with a bit of water

  8. Slice the roll into bite-sized pieces

  9. Serve with soy sauce for dipping
