Homemade Vegan Sushi Rolls
Ingredients
- 1 cup sushi rice
- 2 tablespoons rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 4 nori seaweed sheets
- 1 carrot, julienned
- 1 cucumber, julienned
- 1 avocado, thinly sliced
- 4-6 strips of tofu, fried or grilled
- Soy sauce, for dipping
Preparation
Cook the sushi rice according to package directions.
In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
Once the rice is cooked, gently fold in the vinegar mixture and allow it to cool.
Prepare the fillings by arranging the julienned carrot, julienned cucumber, sliced avocado, and tofu strips.
Place a nori sheet on a bamboo mat or clean surface.
Spread a thin layer of seasoned rice over the nori, leaving a small border at the top edge.
Add the prepared fillings in a line across the center of the rice.
Roll the nori tightly around the fillings, sealing the edge with a little water.
Use a sharp knife to slice the roll into bite-sized pieces.
Serve the sushi rolls with soy sauce for dipping.
